

The top voted recipe that won our Summer Eats & Treats contest was Artichoke Bruschetta, which was submitted by Kalli Robison.
The recipe is:
Artichoke Bruschetta
Ingredients:
1 6.5 ounce jar of marinated artichoke hearts; drained and chopped
1/2 cup grated Romano cheese
1/3 cup finely chopped red onion
5 Tbsp mayo or Miracle Whip (light can be used)
1 French baguette; cut into 1/3 inch thick slices
*can add spinach or tomatoes if desired*
Directions:
Preheat the broiler. In a medium bowl, mix the marinated artichoke hearts, cheese, red onion, and mayo. Top French baguette slices with equal amounts of the artichoke mixture. Arrange slices in a single layer on a large baking sheet. Broil in the preheated oven for 2 minutes, or until the toppings are bubbly and lightly browned. Enjoy!
